Cheap Okra and Chickpea Curry

 Cheap, fast, quick and nutritious! I was impressed by Sunbasket's okra and chickpea curry recipe. Like most curries it tastes as good or even better as leftovers. Sunbasket is a US-based meal kit subscription company. Even though I'm not in the US and therefore not a subscriber, Sunbasket publishes its recipes online for free for everyone. The only downside I can think of is the recipe is a little too light and low-fat. I drizzled a teaspoon of heart-healthy extra virgin olive oil right before eating. Other changes I made to the original Sunbasket recipe are I substituted the naan for white jasmine rice; jalapeno for red pepper flakes; and skipped the cilantro because I didn't have it but I don't recommend that move because the flavor suffered for it.

Ingredients:

cooking oil (Canola for example)

2 small yellow onion, minced
2-inch piece ginger, minced
4 cloves garlic, minced

1 teaspoon garam masala Indian spice mix
1 teaspoon red chili flakes
 

600 grams okra, tips and tops trimmed, and stalk cut to 1" pieces

6 tomatoes, chopped
2 cans chickpeas (around 500 grams)
small bunch cilantro, stems discarded, leaved roughly chopped

extra virgin olive oil

 

 Instructions:

1. Saute aromatics one at a time:

- Heat pan to medium high level. 

- Add oil and onion. Saute until onion is semi-translucent and light brown and pan stops sizzling.

- Add garlic and ginger. Saute quickly until garlic ginger are uniformly mixed with onion .

- Lower heat to medium low. Add garam masala. Saute quickly until garlic ginger and onion are evenly coated with garam masala.

- Add red chili flakes. Saute quickly until all ingredients are evenly coated with red chili flakes.


2. Saute okra, tomatoes and chickpeas one at a time:

-Increase heat to medium high, add a teaspoon of cooking oil and okra and saute while briskly stirring until okra turns darker green and shiny.

-Add tomatoes and saute. Break the tomato chunks into smaller pieces with your spatula. Cook until tomato is reduced and has watery paste consistency

-Add cooked/canned chickpeas

3. Remove from heat. Serve with white rice. Garnish with cilantro and olive oil.
